Peanut Butter Crisscrosses

So a few weeks ago, a couple friends and I went to the beach on a lovely Saturday afternoon. The weather wasn’t exactly the warmest and the sun kept coming in and out but we didn’t complain! We were just happy to have each others’ company. I havent seen these friends in forever and I don’t get to see them that often since they go to a different school than mine. Hence I was very very excited to see them! The day could easily be summed up to 3 things: eating, playing, jumping off logs (see photo above).

I don’t have a lot of friends who share the same kind of passion I have for sweets. But that day, I was hanging out with my fellow cookie monster, so I asked him what he wanted for dessert.

His immediate response was : “PEANUT BUTTER COOKIES!”

I introduced him to this phenomenon the first time we met and he always recalls them with enthusiasm. So peanut butter cookies it was. I used the recipe from Dories book. Personally I didn’t enjoy them as much as I thought. Maybe I messed up somewhere, but I got crumbly cookies instead of chewy ones with a crispy edge. Guess it’s time to add another thing on my list of adventures: the adventure of finding/creating a peanut butter cookie that will wow the socks off people. I felt kinda bad for feeding these to him after all the hype I created to lead up to the cookies. I should bake these again another time along with my other peanut butter go-to recipe to compare them.

Peanut Butter Crisscrosses

2 ½  AP Flour
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
Pinch of nutmeg (I used cinnamon)
2 sticks butter
1 cup peanut butter
1 cup brown sugar packed
¾ sugar
2 large eggs
1 ½ chopped salted peanuts (I omitted)
½ cup sugar for rolling

How-To:
Whisk dry ingredients together

Beat butter for a minute or two until creamy

Add peanut butter and beat for another minute

Add sugars and beat for 3 mins more

Add eggs one at a time and beat for 1 minute after each addition

Add dry ingredients and mix only til incoporated. Do not over mix

Add peanuts (if using) and the dough will be very soft, that’s normal.

Bake for around 12 mins (I baked mine for 10 mins)

Let the cookies sit on sheet for a minute then take them off and put them on a cooling rack
