An Off Day

Thanks for all your motivating comments and bringing me up when I was having a bad day. Reading what you guys wrote whilst eating cake was the best cure 🙂

I didn’t realize that I forgot to put the recipe up until today! I was preoccupied studying for the chemistry exam I had today. For once, I thought I would be ready for chem. I’ve been studying for days and I even stayed up til 430 preparing for it. But nope, it kicked my trash in that exam room. Sigh, could use some cake right now.

Don’t know what it was, but I was feeling kinda off today. I had this perma-frown that just wouldn’t get off my face.

Maybe it’s because I forgot “The Help” on my desk this morning and I’m itching to read it.

Maybe it’s because of my pathetic stop-and-go run earlier today where the longest time I actually spent running was 10minutes. The rest of the time was, well, stopping. 

Maybe I’m just stressed because it’s exam time. PS: Only 21days until glorious summer vacay.

When I saw my friends today, I didn’t feel like talking to them. I wanted to get away, in case my perma-frown was contagious.

I left my friends and walked outside to where I was greeted with a warm wash of sun. Usually basking in sunshine can get me out of any bad mood, but I still couldn’t shake off what I was feeling.

I even tried listening to my favourite summer jam: beautiful soul. But nope, that didn’t work either.

Good thing I have half of a black forest cake in my fridge, that should fix me. Bye now, I need to start making my way to the kitchen.

Light Mango Pudding

Ingredients

2 mangoes
2 1/4 cups water, divided
1/2 cup sugar
1 tbps gelatin
1/4 cup whipping cream (optional)

How To

1. Coarsely chop the mangoes.

2. Combine the chopped mango and 1/4 cup of water in a blender, process it until smooth. Then press the puree through a sieve to remove solid bits.

3. Bring 3/4 cup of water to a boil. Add sugar to the pan, stir until sugar dissolves. Remove from heat, stir in remaining 1 1/4 cups of water. Sprinkle gelatin over the water in the pan and let stand 1 minute.

4. Add the mango puree to pan, whisk. 

5. Divide mixture among ramekins/bowls. Cover and chill until set. Top with whipped cream, or not (if you’re crazy).

Good news guys! My site stats went up to 100 views for yesterday! That’s the highest I’ve ever gotten!! and it’s all because of YOU ! I honestly didn’t think anyone would read my blog at all, so I’m really happy about where I’m at today.

Also, I wanted to say thanks to everyone who commented on my last post about Operation Beautiful. You guys totally made my day (and the rest of my life) with your sweet comments! My siblings thought I was watching a really cheesy romantic movie or something cuz I had my hand over my heart and I kept awwwwwing.

I feel so lucky to have such awesome blog friends :’)

Anyway, I’ll stop being cheesy now in case I’m making you uncomfortable ahaha

On to the cookies! What kind of cookie monster am I? I haven’t posted a cookie recipe in forever! When I realized that, I quickly baked up a batch before the cookie gods decide to take away my title.

 Alright, alright, if you guessed whole wheat flour then you’re correct! These babies are made with 100% whole wheat flour as well as flax, seeds, wheat germ and oats! I had about 5 of these in one go. Yenno, to fulfill the daly requirements of fiber and whole grains 😛 

I said they’re ALMOST good for you cuz like any delicious cookie, it has butter and chocolate, but in smaller amounts than usual.

Remember how I told you guys about my crazy family and how they don’t like my baking? Well here’s another story for you today.

Me: “Yo bro, have more cookies.”

The brother: “Nah, I don’t really like them?”

Me: “What the heck dude, you had 2 yesterday!”

The brother: “yea, but they have oatmeal and I don’t like how it makes the cookies crunchy.”

Me: “You guys suck, the oats make the cookie.”

The brother: “Yenno what’s weird though? I REALLY LIKE the chips ahoy cookies!”

Me: “Dude, you know how I feel about store bought cookies. So you like those cookies, but not mine. That’s the most offensive thing you could say to a baker.”

 See what I have to go through everyday? So much rejection. So much hurt.

But nothing a cookie can’t fix!

Don’t be like my brother, treat yourself to some whole wheat oatmeal cookies with lots of TEXTURE (not crunch, I would NOT make crunchy cookies). He’s 15 and ignorant. He’s clearly too young to know what a good cookie is, even if it hit him in the face.

Whole Wheat Oatmeal Chocolate Chip Cookies

Ingredients

1 1/4 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt ( I left this out)
1/2 cup dark brown sugar
1/2 cup granulated sugar
1/2 cup butter, softened to room temperature (I used salted butter)
1 egg
1 1/2 tsp vanilla
1 tbsp milk (I used skim)
1 cup rolled oats (I used rogers oats. a blend of oats, wheat germ, and flaxseed)
1 cup semisweet chocolate chips (I only used 3/4 cup and that was PLENTY, even for me)

 How To

1. Preheat oven to 350 degrees F

2. Whisk WW flour, baking powder, baking soda and salt (if using) in a bowl.

3. Cream butter on low just to break the shape. Then add in both sugars and beat until creamy.

4. Add egg, vanilla and milk to the butter mixture and mix well.

5. Slowly add the dry ingredients in and mix until JUST incorporated. Don’t want gluten to form !

6. Switch to a spatula and mix in oats and chocolate by hand.

7. Using a cookie scoop or two spoons, drop cookie dough onto a baking sheet and bake for 12-13 mins. Note: I made really big cookies, if you’re making standard sized ones, go with 10-11 mins.

Yield: 12.5 large cookies

Very Apple Streusel Muffins and Why I’m Happy today

Hi everyone! Pardon me for the lack of posting, I’ve just been so busy! I get some evenings off after work, but I’m usually so tired out from work that I don’t want to move at all! So that’s why I haven’t been posting: because I’m too tired to move my fingers. I’m sorry, it’s a terrible excuse, but at least I’m not lying! I would never lie to you guys 🙂

Today though, I told myself to suck it up and write this post. You guys have been nothing but nice to me and I think you deserve another recipe 🙂

Shall we talk about why I’m super happy today? Yea, let’s start with the better news first!

So today…. I REACHED 76 VIEWS!! I know that’s barely anything, but it’s the most views I’ve ever gotten! Thank you so much you guys! It’s all you! I really really wouldn’t be here without you! You have no idea how happy it makes me every time you guys view my homepage and click on my other recipes and leave a comment! I run around the house screaming “I GOT A COMMENT I GOT A COMMENT I GOT A COMMENT!” or “I GOT 76 VIEWS, 76 76 76 76 76!” depending on the circumstances 🙂 Just ask my siblings, I go CRAZYY when it comes to blogging.

So thank you, again. You guys are awesome, seriously 🙂

Now on to the muffins!

I was craving me some baked goodies, but I didn’t want to eat something unhealthy. So I started with making some applesauce, to see if that could satisfy my cravings without having to whip out a mixer preheat my oven.

The applesauce was awesome! I never made it before because I never realized how easy it is! All you do is boil some apples and water for about 15 mins and there you have it!

While it was good, it can’t compare to CARBS for satisfying my sweet tooth. Since I had so much applesauce leftover I decided to make some apple muffins!

I found various recipes and then kinda tweaked them all to create my very own. I’m usually not one to experiment in the kitchen. I make mistakes even when I am following recipes, so imagine how disastrous it could be if I decided to make my own recipes!! lol!

But I was feeling daring 😉 so I went ahead and whipped up the muffins. And contrary to my expectations, they turned out really well! These muffins are good for the soul, yenno what they say: an apple a day keeps the doctor away! I live by that, and so should you 🙂

*note: make these healthier by leaving out the oil/replacing it with more applesauce and leaving out the streusel

Very Apple Streusel Muffins

Ingredients
2 cups AP flour

1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsweetened applesauce *this may be more liquid than needed
1/4 cup vegetable oil 
1/2 cup brown sugar (not packed)
1/2 cup white sugar
2 eggs
1 1/4 tsp vanilla
2 cups chopped apples

For the streusel:
1/3 cup brown sugar
1 tbsp AP flour
1/8 tsp cinnamon
1 tbsp butter

How To

1. Preheat oven to 360 degrees F

2. Whisk together flour, baking powder, baking soda, and salt

3. Beat the applesauce, oil,  both sugars, and eggs until smooth

4. Splash in the vanilla, then stir in the apples. Slowly add in the flour mixture and mix until JUST incorporated

5. Making the streusel: in a small bowl, mix together brown sugar, flour and cinnamon. Cut in the butter until the butter is scattered in small lumps. 

6. Sprinkle the streusel over the muffins and bake for 15-20 mins. Cool 5 mins in pan before removing.
