Peanut Butter Chocolate Cupcakes

I made these for C’s 20th birthday!!!!! Don’t worry, I made him more than just 4 cupcakes. I was just too afraid to bring too many outside in case of a crow attack. Those birds are always out to get me.

Some of you might remember me mentioning him before. For those of you who don’t know who I am talking about, he made some appearances here and here. He is one of my bestest bestest BESTEST friends. I can always count on him to be there for me. He’s such a great listener. I’ll never forget the time when I broke up with my 2nd boyfriend(ish) and he was there to listen to me cry, cry, complain and cry for hours, weeks, months and sadly 1.5 years. When we hang out we always end up just talking for hours and hours and it feels completely effortless. It’s surprising how we haven’t ran out of things to talk about yet 😛 

We have this tradition for celebrating each other’s birthday. Right at midnight on his birthday, I would go to his house ARMED WITH DESSERT, this point is very important because dessert is a very integral part of this friendship. And he does the same for me when it’s my birthday. It’s a good thing that we only live 4 blocks away from each other, otherwise it’d be a bit hard to carry a cake with candles and drive at the same time. 

In previous years, I made him a malted chocolate cake (biggest fail ever) and a normal chocolate cake. This year I made him peanut butter and chocolate cupcakes because I just found out that pb+chocolate is his favourite flavour combo even though we’ve been friends since we were 9 years old! 

Looking at pictures from his last birthday makes me feel a bit sheepish. My cake decorating skills were mediocre at best. 

Whoops, caught ya mid-chew.

He was a good sport and enjoyed what I made him anyway. At least that’s what he told me.

Peanut Butter Chocolate Cupcakes

Chocolate Cupcakes

  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY’S Cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup buttermilk or sour milk*
  • 1 cup strong black coffee OR 2 teaspoons powdered instant coffee plus 1 cup boiling water
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
How To:
1. Heat oven to 350°F. Line two 12cup muffin pans with paper liners.2. Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla; beat on medium speed of mixer 2 minutes (Batter will be thin). Pour batter evenly into prepared pans.

3. Bake 18-20 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. 

Peanut Butter Buttercream

1 1/2 cups unsalted butter, softened
1 cup creamy peanut butter
2 tablespoons vanilla extract
3 1/2 cups confectioners’ sugar, sifted
approx 2 tablespoons milk (I used skim, but I wouldn’t recommend it) 

How To:

1. Cream butter until light and fluffy. Add peanut butter and cream on medium for 2 minutes.

2. Slowly add in sifted icing sugar, scrape down sides of bowl as needed. 

3. Add vanilla and 1 tbsp of milk, beat until incorporated. Add last tbsp of milk if icing is too thick.

4. Beat on high for a couple of minutes until frosting and smooth and fluffy.

Milk Chocolate Ganache

1 cup heavy cream
8 oz milk chocolate chips (I swear by Ghirardelli’s Natural chocolate chips)

1. Heat heavy cream until it just begins to simmer, then take it off the heat and add in chocolate. Wait a minute or so before stirring the two together. 

2. Let cool at room temperature.

New Found Love for Snickers Bars

It was my friend’s 20th birthday last Sunday. 

Golly, 20 is a HUGE number. It scares me how fast time is passing by, I swear we were just celebrating our sweet 16’s a couple months ago. I’m so glad that I’m still 19 and that my birthday is in December. There’s a long wayyy to go before I’M 20 😛

Anyway so back to my friend’s birthday, I was frantically trying to find a birthday present for him a couple hours before his party. 

Here was my thought process:

Hmm, what to get him… OH he’s active and he’s pretty health conscious, OK so I’ll get him a smoothie maker and a tumbler!

Hang on, are there such things as smoothie makers? Oh right, blenders make smoothies. Dammit, I’m pretty sure he has a blender already.

Arghh, that was a million dollar idea too. Now I have think again… oh heyyyy, last time I hung out with him, he bought a snickers bar from a vending machine. That must means he LOVES them right? Sweet, I’ll make him some snickers for his birthday!! Whoohoo I found him a present!! No more shopping!

I’m terrible at gift shopping, it’s really hard for me to think about what others would like. I would rather study for a midterm than go gift shopping. 

   

You wanna hear about the snickers now don’t you? 

To be honest, I was never a huge fan of snickers bars.

Every halloween, snickers bars would be the first things I give up for trade, right after crispy crunch bars of course. (Crispy crunch is grossssss)

I could probably live without eating snickers ever again. I said probably.

I had the full intention of giving away all 16 bars that I made to my friend, but I had  to try one. Standard taste-test yenno? 😉

One bite and I was converted. These tasted just like the store bought ones but a BAJLLION times BETTER. They had a huge kick of PB flavour, a chewy layer of nougat and crunchy peanuts for a contrast of textures. I immediately wished for a time machine so that I could go back in time and un-trade all of my snickers bars.

Homemade Snickers Bars

Bottom Chocolate Layer:

1 1/4 cups milk chocolate chips
1/4 cup peanut butter

Thoroughly grease a 9×13 baking pan. Melt chocolate and PB together in a microwave, then pour into the baking dish and spread until even. Put it in the freezer to let it harden.

Nougat Layer:

1/4 cup unsalted butter
1 cup granulated sugar
1/4 cup evaporated milk
1 1/2 cups marshmallow fluff
1/4 cup peanut butter
1 1/2 cup salted peanuts chopped, roughly chopped
1 tsp vanilla extract

Melt butter in a microwave-safe bowl. Add in sugar and milk, stirring until dissolved and bring to a boil in the microwave. Let it boil in microwave for another 2-3 mins , stirring at each 1 minute interval. Add in fluff, peanut butter and vanilla, stirring until smooth. Fold in peanuts, then pour over bottom chocolate layer. Put the pan back into the freezer while you prepare the caramel layer.

Caramel Layer:
1 14-ounce bag of caramels

1/4 cup whipping cream

Combine ingredients in a microwave-safe bowl and heat on medium for a couple minutes or until caramel melts. Stirring  until smooth. Pour over nougat layer and put pan back into the freezer.

Top Chocolate Layer:
1 1/4 cups milk chocolate chips

1/4 cup peanut butter

 Melt chocolate and PB together in a microwave, then pour over the caramel layer and spread until even. Put it in the freezer to let it harden for about 20 minutes.

When you take out the pan from the freezer it takes about 5-10 minutes for the bars to soften, then you can cut them easily and serve.

Chocolate PB Love

I had the most amazing day yesterday.

To sum it up, here are the things that rocked my world yesterday:

1. Sunshine. i love the sun, sun makes me glow with happiness

2. no work. i asked a coworker to take my shift so I could sleep in til 9 30 am. I can’t sleep in past 10am, am I weird?

3. mom bought me lunch!

4. watched tangled with my sister. it was funny, it was beautiful, it was classic disney 🙂

5. I went for a run in the sun and did a little a dance at the track to celebrate the end of rain. I’m hoping no one saw that

6. I refueled with some chocolatey PB goodness.

This is where I come in and talk about how good these chocoPB  “chews” are, cuz y’all probably dying to know. You ready?

THEY WERE AWESOME! So good, in fact, that I ate the whole batch all by myself in under 30 mins.

Imma make another batch tmr and try to top myself.

Self-improvement ya know?

And an excuse to eat more of these 🙂

Oh and I may or may not have licked the bowl afterwards.


Chocolate PB Chews
adapted from: Oh She Glows

Ingredients

1/4 c natural PB
2 tbsp semi sweet chocolate chips
3 tbsp honey
1/2 tsp vanilla
1 1/2 tsp cocoa
1 c rice krispie cereal

How To

1. put  PB, chocolate chips, vanilla, and honey in a microwavable bowl. Microwave for 45 secs and stir til completely melted and combined.

2. add cocoa and stir. now add the rice krispies.

3. damp hands and roll the batter into balls. ahaha balls. sorry, back to being 18, roll them into spheres

4. place spheres onto a plate/tray lined with wax paper and freeze for about 5 mins.

5. take em out of the freezer and dig in!
