The Best Chocolate Chip Cookies… thus far

I’m always hesitant to use superlatives to describe food. I mean, how do I know that it is indeed the best of the best in the whole entire world? 

Like every other baker, I’m on the hunt for THE chocolate chip cookie. I have 3 simple criteria: chewy, soft, and a subtle hint of a caramel undertone. The closest that I’ve ever come to finding my favourite CCC was the cook’s illustrated recipe and a browned butter ccc recipe. Those were good recipes and they satisfied my undying craving for CCCs… but then I came across Alice’s recipe. I saw her recipe over at Two Peas and Their Pod a couple years back when Maria, a fellow cookie monster, featured it on her blog. I knew it must be good to get a feature, but I never tried it out because the recipe says to weigh out the ingredients… ain’t nobody got time fo dat! 

So I kept the recipe bookmarked for a couple of years before I finally tried it out. I didn’t weigh out the ingredients even though it was recommended (rebel status) but fortunately the cookies turned out nothing less than fantastical! Seriously, these cookies changed my life! I think I may have found THE chocolate chip cookie recipe for me. I don’t know how you did it Alice, but your cookies sure do live up to the “best ccc” title. It might have been the salted butter or the touch of sea salt instead of regular table salt. Or maybe because I used chocolate chunks instead of chocolate chips, but dayummmm these cookies were thebomb.com.

Brownie INSIDE a cookie?!


It’s been a while since I last posted a cookie recipe! So I figured that I better post one soon before you guys strip me of my cookie monster title 😛



To be honest, I’m less enchanted by cookies than I used to be. I know, I know, what kind of cookie monster am I?! I don’t know what happened but recently my thoughts have been consumed by cake! As you probably have noticed, I’ve only been talking bout cake for the past couple of months. I never thought I would become this engaged and interested in cake decorating especially since I was never one to care for aesthetics. 

I basically had to force myself to bake these cookies. All I want to do nowadays is make a cake and decorate it, but my brother bought a tub of vanilla ice cream that NEEDED to be paired with cookies or brownies. But because I couldn’t decide between the two, I made both and enveloped them together. 




You should never have to decide between cookies or brownies, that would just be cruel.

Brownie Stuffed Chocolate Chip Cookie


1 batch nestle tollhouse ccc’s
1 batch dorie greenspan’s classic brownies 

How To

1. Bake brownies according to recipe and allow to cool completely before cutting into pieces.

2. Make the cookie dough according to the recipe.

3. Take a scoop of cookie dough and place it on the palm of your hand. Flatten it out into a circle.

4. Take one piece of brownie and place it in the center of the dough on your palm.

5. Take another scoop of cookie dough and place it on top of the brownie. Adhere the two cookie dough pieces and roll it in your palm to seal the dough.

6. Bake for approximately 16 mins (change baking time depending on the size of your cookies) until light brown around the edges. Let the cookies cool completely on the tray before handling.

Make your house smell lemony fresh.. without cleaning

I wish I lived with Monica from the show Friends. I hate cleaning. Luckily, I have discovered another way to make my house seem tidy without all the work. Instead of bringing out the Mr.Clean, just bake some lemon cookies! It’ll smell like some major house cleaning was done. No one will even notice the piles of dishes and dirty laundry. Score!

Uh oh, I think I may have just killed all my chances at finding a room mate. 


Two days ago, on April 18th, something amazing happened. This blog turned 2 years old!!!! I’ve been a horrible blog owner and havent celebrated yet, we can all blame exams. Once my last one is finished (which won’t happen until next week, arghh) you can bet there will cake and lots of it becauase that’s how a blog birthday is done. 

Earlier this week, when I went to work to pick up my port pass (cruise season is starting up again!), a friend who/whom (i never know which to use!) I haven’t seen in months said to me: “Where did you get those glasses? The hipster outlet?” Now I can’t stop laughing hysterically every time I put them on. 

Focus on the “hipster” glasses even though my only dimple is so cute that it’s drawing your attention (definitely has nothing to do with the fact that I’m pointing at it ;P) 

Oh and don’t worry bout the pile of clothes in the back, I baked cookies 😛

Lemon Cookies


½ cup butter, softened
1 cup granulated sugar
½ teaspoon vanilla extract
1 egg
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
1-½ cups flour
½ cup powdered sugar

How To

1. Preheat oven to 350 degrees. Spray baking sheets with non-stick cooking spray and set aside. 

2. In a large bowl, cream butter and sugar together until light and fluffy.

3. Whip in vanilla, egg, lemon zest, and juice. Scrape sides and mix again.

4. Stir in all dry ingredients in another bowl and add it in to the wet ingredients, excluding the powdered sugar. Scrape sides of bowl and mix again briefly.

5. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar.

6. Place on baking sheet and repeat with remaining dough.  Bake for 9-11 minutes or until cookies and cracked on top (mine took about 14 minutes). Remove from oven and let cookies cool down before transferring to a baking sheet.
